“chicken” n waffles

what’s better than “chicken” fried tofu? “chicken” fried tofu over waffles…that’s what! add a side of oven roasted peewee potatoes and streamed broccoli and you got yourself a dinner!!!!

spicy buffalo cauliflower “wings”

1 cup water or soy milk
1 cup flour (any kind will work—even gluten-free!)
2 tsp. garlic powder
1 head of cauliflower, chopped into pieces
1 cup buffalo or hot sauce(not the biggest fan of buffalo so i used mixture of bbq sauce and hot sauce…still good either way)
1 tbsp. olive oil or melted vegan margarine

  • preheat the oven to 450°F.
  • combine the water or soy milk, flour, and garlic powder in a bowl and stir until well combined.
  • coat the cauliflower pieces with the flour mixture and place in a shallow baking dish. Bake for 18 minutes.
  • while the cauliflower is baking, combine your buffalo sauce and olive oil or margarine in a small bowl.
  • pour the hot sauce mixture over the baked cauliflower and continue baking for an additional 5 to 8 minutes.

vegan ranch dressing

1 cup vegan mayonnaise

1/2 teaspoon garlic powder

1/2 teaspoon onion powder

1/4 teaspoon black pepper

2 teaspoons parsley, chopped

1/2 cup unsweetened soymilk

pb&j cake

a simple and fun cake i made.  pick your favorite basic yellow or vanilla cake recipe. bake in two 8″ round cake pans. pick your favorite jelly…i went with a strawberry preserve. for the peanut butter frosting, mix 1 package of extra firm silken tofu, 1 cup of peanut butter, 1 cup of powdered sugar in a food processor. after mixed together and creamy add 1/4 cup of flour to thicken. set frosting set in refrigerator over night or for at least a couple hours. once cake is cool, spread jelly over the bottom cake layer then stack other cake layer on it, then spread frosting over the entire thing.  one thing left….enjoy!

its about time….

everyone has been bugging me about creating a vegan food blog…so here i go. not really sure what i’m doing here…i cook, i don’t write. anyway i guess i will just start with today’s lunch.  

seitan, sweet potato, spinach and avocado tacos. pretty simple, the only thing special is the sweet potato and seitan is marinated with sriracha, olive oil and whatever other spices you wanna add.
