a simple and fun cake i made. pick your favorite basic yellow or vanilla cake recipe. bake in two 8″ round cake pans. pick your favorite jelly…i went with a strawberry preserve. for the peanut butter frosting, mix 1 package of extra firm silken tofu, 1 cup of peanut butter, 1 cup of powdered sugar in a food processor. after mixed together and creamy add 1/4 cup of flour to thicken. set frosting set in refrigerator over night or for at least a couple hours. once cake is cool, spread jelly over the bottom cake layer then stack other cake layer on it, then spread frosting over the entire thing. one thing left….enjoy!
